last month, i finally did something that i have been wanting to do for awhile...i made cafe rio! i made the sweet pork, cilantro lime rice, and black beans. boy was it tasty! i loved it, and there was so much we had salads the first night and burritos the next, yum yum.

i made my first diaper cake for a good friend who had her 3rd baby boy last month. it was actually much easier then i thought it would be and i love how grand they can look. they weren't sure on the name davis, but it stuck once he was born. i think i will make more in the future, i loved it!
lastly, i made one of my favorite recipes from my mom, eggplant pizza! it is so tasty, homemade dough, homemade pesto, eggplant, tomato, sausage, cheese...i wish i had some to eat right now! serve with a spring mix salad....magnifique!
